Our History

Since 1947, Cedar Valley Cheese has flourished as a family-owned business in the heart of Wisconsin’s dairy country. Our story began when founder Ralph Hiller opened a small cheese factory, laying the cornerstone for a company built on quality, innovation, and strong community values. Through decades of growth and change, Cedar Valley remains dedicated to traditional cheese making while embracing the advancements that shape our industry.

From our early days producing American cheeses, we have proudly evolved with the times—partnering with Italian cheese maker Gino Boccotti to bring new flavors and expertise to our offerings. Generations of skilled cheese makers, many with over 20 years at Cedar Valley, have honed their craft and passed down time-honored recipes along the way.

As demand grew, so did we. Expansions of our facilities—including a state-of-the-art warehouse and advanced production lines—have allowed us to support our local farmers, team members, and customers across the country. Today, Cedar Valley Cheese crafts millions of pounds of award-winning cheese each year, sourcing fresh milk daily from nearly 100 Wisconsin farms and serving customers nationwide.
