Our Tradition

Established in 1947 by Ralph Hiller, and passed on to William Hiller (at left, near), and now run by Jeff Hiller (at left, far), Cedar Valley Cheese has grown from a small Wisconsin plant into a respected name in the cheese industry, while remaining family-owned and deeply connected to local farms.

Our tradition is more than a recipe—it’s a promise to uphold quality, build lasting partnerships, and contribute to the proud legacy that makes Wisconsin the nation’s top cheese producer. At Cedar Valley Cheese, every bite is a taste of our roots.

Our historic and award-winning cheese is sourced from fresh milk obtained daily from nearly 100 southeastern Wisconsin dairy farmers, honoring the legacy of artisan craftsmanship. Generations of licensed cheese makers, each with decades of experience, ensure every batch meets our exacting standards for flavor and consistency. Over the years, our commitment to innovation and tradition has earned us recognition, awards, and the loyalty of customers near and far.
